What is ricotta toast?
It’s as simple as its name: it’s ricotta on toast. Not sure where it came from, it’s as simple as butter on toast, but so much fancier and better. A good yeast is not acidic, it is perfectly balanced, complex and forms the best base for the filling.
If you don’t have access to good sourdough and don’t want to make your own, try whipped ricotta toast on slices of crusty country bread, hearty whole wheat bread, or even bagels. . Whipped ricotta also tastes amazing on pancakes or waffles.
What is ricotta?
Ricotta is a cheese, originally made in Italy but now available all over the world. It is a smooth, creamy cheese with soft, slightly sweet little curds. It is smooth, fresh and creamy. You will find it in tubs in the refrigerated section and it tastes incredible with pasta as a base for dips, on pizzas and in desserts.
How to make whipped ricotta

1. Classic ricotta toast
Spread a generous amount of whipped ricotta over toasted sourdough, then drizzle with extra virgin olive oil and balsamic vinegar (if desired) and finish with flaked sea salt and freshly ground black pepper.
2. Ricotta toast with honey and thyme
Spread a generous amount of whipped ricotta over toasted sourdough, then drizzle with a generous amount of honey and finish with fresh thyme. Pro Tip: A pinch of flaked sea salt takes the slack!
3. Avocado Ricotta Toast
Spread a generous amount of whipped ricotta over toasted sourdough, top with sliced avocado, a drizzle of extra virgin olive oil, flaked salt, pepper and herbs, if desired.
4. Crispy pesto egg
