Essentially, it’s exactly what it sounds like: cottage cheese ice cream. Traditional ice cream uses heavy cream, sugar, and flavorings. Cottage cheese ice cream replaces cream with cottage cheese. tricks and cunning

Use the best cottage cheese you can find.

My favorite (not sponsored, I really like them) cottage cheese brand is Good Culture. For this particular post, I tried the classic double cream cottage cheese and it was incredibly creamy and delicious.

Stir occasionally while freezing

Stirring the cottage cheese ice cream occasionally as it freezes will give the ice cream a smoother, less crystallized texture, as it will break up the mixture and blend the frozen and unfrozen parts together. It’s a simple way to churn up ice cream without using an ice cream maker.

Stir the mixtures while they are partially frozen.

If you don’t want all of your mix-ins to sink or float to the top, the key is to let the cottage cheese ice cream freeze in 30-minute increments. Let it freeze, add some mixes, let it freeze, stir again with more mixes, then let it freeze for 30 minutes, stir if you can, then let it freeze completely.

Let cool before unmolding

Straight from the freezer, cottage cheese ice cream is a little hard to pick up. Most commercial ice cream contains chemical stabilizers that make it easy to remove directly from the freezer. Since we’re going to be homemade, we need to let our cottage cheese ice cream warm up a bit on the counter before it reaches a recoverable texture. Leave your ice cream on the counter for a few minutes before eating it. Or, if you like the frustration and pain, use a spoon to scoop it right out of the freezer bowl.

Tools

blender/food processor/immersion blender – any of these will do, the goal is to make the cottage cheese as smooth, creamy, airy and light as possible. Be sure to use a silicone spatula to scrape down the sides and mix everything together to combine all of the cottage cheese curds.

Container: Any container with a lid will do. Most people use a loaf pan (because homemade ice cream always seems to be in a loaf pan, but you can use anything, even the container the cottage cheese came in).

flavors

Go mad! Their ice cream base isn’t as high in calories as regular ice cream, so why not pack in a ton of flavor through toppings?

extracts and spices

Liquid extracts add a lot of flavor. You only need 1/2 teaspoon for a teaspoon. Try: vanilla, lemon, almond, mint or coconut. You can also use spices, a little cinnamon, nutmeg, cardamom or ginger will add warm spicy notes.

chocolate and nuts

Chopped chocolate (or chocolate chips) and nuts add textural contrast and deliciousness.

Fruit

Fruit is probably the best pairing with cottage cheese ice cream. You can mix it directly into the base with cottage cheese and add pieces of fruit.

swirls

You can shake anything jam or liquid to add a pretty and tasty element. Think: jam, nutella, caramel, melted marshmallows, lemon curd, maple syrup, or honey.

cake, cookies, cake

The chopped baked goods in ice cream are my absolute favorites. The bits are the best part, right? Some of my favorites: birthday cake, chocolate cake, brownies, oreos, chocolate chip cookies, pretzels, peach cobbler, apple pie, omg I could go on and on but you get the idea.

chocolate

Add 2 tablespoons of cocoa powder. Add 1/2 cup of the chopped chocolate or chocolate chips. Or cut up some of your favorite chocolate bars and mix them up.

Strawberry

Add 1/4 cup coarsely chopped strawberries with the cottage cheese, then add an additional 1/2 cup sliced or chopped strawberries. For a little more decadence, add 2 tablespoons of strawberry jam at the end.

Banana

Add 1 banana and 1/2 teaspoon vanilla with the cottage cheese. Add an additional banana, sliced or chopped. Optional: Add 1/4 cup chopped chocolate and 1/4 cup chopped walnuts to create chunky monkey ice cream.

Who invented cottage cheese ice cream?

TikTok’s cottage cheese ice cream is going viral, and like most viral recipes, it’s a little hard to tell who made it first. Sometimes the person who invented the recipe doesn’t go viral; in this case, as far as I can tell, Paige Lingren makes cottage cheese ice cream go viral.

But why?!

Because cottage cheese is delicious and ice cream too! Cottage cheese is low in calories and high in protein. Why not eat it in a new and fun way? It’s super easy to make, very customizable, fun to make, and delicious. It’s a winner all the way.

Why does it work?

The fat content of cottage cheese is lower than that of heavy cream, but since both are dairy products, they blend together quite well. Whipping/blending the cottage cheese gives it a smooth, creamy texture that freezes well. Because cottage cheese is soft, it takes on sweetness and other flavors well.

What does cottage cheese ice cream taste like?

It’s a creamy-sweet frozen treat (easily customizable to make it sweeter or less sweet). Does it taste like cottage cheese? If you are a great taster, of course, you can tell that it is cottage cheese. If you add a lot of additives and sweeteners, you will notice less that it is cottage cheese. It really depends on what kind of ice cream connoisseur you are. If you think it’s a high protein, creamy and sweet frozen treat, you’ll love it! It reminds me more of frozen yogurt than traditional ice cream, but it doesn’t drive me crazy.

lucky marshmallows | www.iamafoodblog.com

For my version, I used regular sugar, Lucky Charms marshmallows, and sprinkles. It’s not the healthiest, but it’s colorful and fun and it ended up tasting SO GOOD. Dream combination, without a doubt. I made a mistake incorporating the marshmallows and chocolate chips right away so the sprinkles fall to the bottom and the marshmallows rise to the top so if you’re making any add-ons be sure to check out the tips and tricks for how to do it . prevent that from happening. She may look like a little mess, but she’s cute and tasty, so it’s all good.

Happy cottage cheese ice cream making! What flavors will you try this summer?
