Do you like cake? Do you like cups? If you answered yes to any of the questions, you know in your heart that mug cake is for you.
The mug cake is incredibly cosy! What’s better than snuggling up on the couch with a hot chocolate muffin in your hands? It is the pinnacle of being.
Food confession time: When I was a kid, I used to love those frozen chocolate cakes you got at the grocery store. Deep’n Delicious is the chocolate cake that holds all my warm fuzzy nostalgic childhood memories. I’m pretty sure it’s a Canadian thing, so if you have no idea what I’m talking about, I don’t blame you. Basically, DND (as it will be called now) is a frozen chocolate cake with a star-shaped chocolate frosting on top. The closest thing I’ve found living in America is SaraLee.
I absolutely don’t buy frozen chocolate cake anymore (or do I?!), but what I remember loving was the fact that there was always cake on hand. It was frozen, but magically easy to cut and enjoy any time of the day. Mug cake is almost as easy as pulling a pre-made cake out of the freezer, but it has the added bonus of being warm, so mug cake is my new favorite thing!
What is mug cake?
The mug cake is a cake that is made in a cup! Cooking in a minute in the microwave, it’s a warm, chocolaty delight that will satisfy any chocolate sweet tooth. Cupcake is perfect when you only want one serving of cake and don’t want to break out all your baking equipment.
How to make a mug cake:
- Whip. Whisk the milk and oil in a mug.
- To mix. In a bowl (or you can do it directly in the mug), mix the flour, sugar, cocoa powder, yeast, and salt.
- Remove. Mix everything and then add the chocolate.
- Four micro where. Microwave your mug cake on a plate (in case it overflows), let cool slightly and enjoy!
What does this taste like?
Darling! Seriously, I’m not kidding, this cake is TOO GOOD. It’s moist, chocolaty, light and fluffy. I love the parts of the fudge that basically make it a molten chocolate lava cake. I like it plain, with a little powdered sugar, with whipped cream, with ice cream, omg I feel like I need it right now. The best part is that it comes together so quickly. Bonus points for the fact that I almost always have everything at home.
Cake ingredients in a cup
For this mug cake you will need:
- Milk. I use the milk I have in the fridge, usually 2% or almond.
- Oil. Try to use a neutral oil that is flavorless like canola oil.
- Common flour.
- Cocoa powder. For the cocoa powder, we need the unsweetened kind, not the hot chocolate milk.
- Chemical yeast.
- Sucre. You can adjust the sugar to your liking or use a sugar alternative.
- Chocolate chips. The chocolate turns sticky and gooey and that’s the best part! I usually just chop up some baking chocolate/bar if I don’t have any chocolate chips in the pantry.
No eggs in this mug cake?
If true. This recipe has been updated and there are no more eggs in this mug cake. Eggs tend to give cup cakes a rubbery texture, so goodbye eggs and hello soft and chewy cakes. As a bonus, he is now a vegetarian and can easily go vegan. I developed this recipe from wacky cake, a cake that does not contain eggs. I kept it pretty similar but replaced the water with milk.
Can I make a vegan mug cake?
Yes! You can absolutely be vegan. Just replace the milk with a dairy alternative: oat milk, almond milk, soy milk, coconut milk, rice milk, cashew milk, macadamia milk.
Can I make a mug cake without sugar?
Sure, you can make a sugar-free mug cake by using sugar substitutes like honey, agave, maple syrup, coconut sugar, or even sweeteners. If using sweeteners, don’t swap sugar one for one, adjust based on sweetener.
tricks and cunning
Each microwave has a different strength, so the first time you make this recipe, try to experiment a bit. I find 1 minute plus 10 seconds in my microwave works best, but I may need a little more. Because this recipe is egg-free, you can eat it sticky if you like cake batter.
The type of cup you use matters! The one with the straight sides is the best and the biggest is the best. Use a mug that holds at least 1 and 3/4 cups. If you use a smaller mug, you should place the mug on a plate so it can catch the overflow, which will make cleanup easier.
variants:
- Fresh cheese: add a cream cheese nugget when you add the chocolate.
- Nutella: add a spoonful of nutella instead of chocolate.
- Peanut butter: add a tablespoon of peanut butter instead of chocolate.
- Coconut: use coconut milk and stir a tablespoon or two of shredded coconut into the batter.
- Biscoff: add a tablespoon of biscoff spread instead of chocolate and top with crushed biscoff cookies.
vanilla cupcake
If you’re looking for an easy vanilla mug cake in two minutes, I’ve got you covered. This mug cake is moist, sweet and full of vanilla. It’s like a birthday cupcake in a mug. Bonus points if you add sprinkles to make a funfetti cup cake! This is how you do it:
In a microwave-safe mug that holds at least 1.75 cups of liquid, mix:
2 tablespoons of milk
1 tablespoon of oil
1/4 teaspoon vanilla extract
1/8 teaspoon white vinegar
In a small bowl, mix:
4 tablespoons of flour
2 tablespoons of sugar
1/8 teaspoon of baking soda
pinch of salt
Add the flour mixture to the bowl and beat well, making sure there are no lumps. Add sprinkles now if you want a funfetti cake.
Place on a microwave-safe plate and microwave for 1 minute and 10 seconds. If necessary, continue to microwave in 10 second increments if not cooked through.
Let cool slightly and enjoy!
Optional: Top with a quick glaze: Mix 2 tablespoons room temperature butter with 1/4 cup confectioners’ sugar and a little vanilla extract or milk until light and fluffy.
If you want to bake an entire cake, here are some of my favorite cake recipes:
